#56 Sweet Potato Porridge with Steamed Fish

On days when my fridge run out of vegetable, I'll turn to the humble sweet potato. There are always small portions of frozen sweet potato in my freezer in case of 'emergency' on days like these. Instantly, the plain o' porridge was turned into a sweet and nutritious meal. To complete the meal with some protein, I added a piece of steamed fish with chinese wolfberries. Ultimate comfort food.




Sweet potatoes are a rich source of carbohydrates, fiberbeta carotenevitamin C and B6. Especially those with orange flesh have more beta carotene than those with light colored flesh.

Hi! I chanced upon your blog and because I've ran out of ingredients at home except for some sweet potato and fish. So I tried this particular recipe today. I added red dates to the fish as well. I'll visit again :)
