#57 Omu-rice

Jr loves rice, egg and ketchup. So, without a doubt, omu-rice is his all-time favourite. To make it a more nutritious meal, I added a piece of pan-seared batang fish, few sticks of cucumber and a cherry tomato. The lettuce almost always end up in my stomach instead. Seaweed, cheese and ketchup were used for the features on the egg sheet.

Omu-rice recipe

Ingredients:
2/3 bowl of cooked rice
2 eggs
1 small onion, diced
chicken thigh meat (cut into small cubes)
1 tablespoon olive oil (or other oil)
1/2 teaspoon minced garlic
1 tablespoon Pasta Sauce
1 1/2 tablespoon ketchup
Pepper for seasoning (salt can be added too)

Method:

  1. Beat egg and season with pepper (and salt).
  2. Heat oil in pan, fry onion and garlic. Add chicken and saute till chicken is cooked.
  3. Add pasta sauce and ketchup, stir.
  4. Add rice and continue frying and mixing for about 2 minutes. Side rice aside.
  5. Heat oil in pan. Add beaten egg and swirl it around the pan so you get a thin layer of egg. Not too thin else it'll break easily.
  6. Place rice in the center and fold up the 4 sides of the egg sheet to wrap up the rice. No need to wrap completely.
  7. Place a plate over the wrapped rice (still in pan) and turn the pan and plate over. Nip and tuck the omu-rice with a spoon so it'll look perfect!
