There was a bunch of banana in the kitchen that has gone soft and too ripe for eating. The 'aunty' in me refused to waste any food so instead of throwing the bunch away, I decided to bake banana muffins. Too bad, I didn't have any walnuts or it would be even yummier.
Banana Muffin Recipe
Ingredients A:
1 & 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
Ingredients B:
3 large bananas, mashed
3/4 cup black/brown sugar
1 egg, beaten
1/3 cup butter, melted
Methods:
1. Pre-heat oven at 180C. Sift ingredients A and set aside.
2. Combine ingredients B in a large bowl. Fold in ingredients A and mix until smooth.
3. Scoop batter into muffin cups about 75 - 80% full. (I used small souffle cups)
4. Bake for about 15-18 mins (If u use bigger cups, you will need to bake a little longer). Insert a toothpick or satay stick to test if the muffins are fully cooked, if the stick comes out clean, the muffins are done!
We ate them straight from the oven, steaming hot with a cup of tea. Bliss.

Yum yum! I haven't make banana cupcakes for a long time. YZ chose banana cake over a plain cake at Toastbox. Think it's time to start baking. =)
