#31 Codfish and Potato Casserole

So glad I bought a tabletop oven so I can easily whip up a single portion of casserole for Junior. This was what he had for lunch.

Codfish and Potato Casserole Recipe
Ingredients:
cod (deboned)
1 small onion (chopped)
1 tablespoons olive oil
1/4 cup chicken/veg broth
parsley (chopped finely)
1 medium potato -- boiled and meshed

mixture of shredded cheddar and mozzarella cheese


Preparation:
In saucepan, cook onion in oil until tender. Add in parsley and in the meantime, sear cod slightly.
Add half portion of meshed potato into casserole, followed by cod, onion, parsley and the rest of the meshed potato. Pour in broth and top with cheese. 
Cover with foil and bake in pre-heated oven at 180C for 45min.


I still prefer baked codfish in OJ. Have to cook that again.
