#36 Chicken with Apricot Pasta

This pasta sauce might not look that good but it surely taste yummy. Recipe was adapted from Annabel Karmel's New Complete Baby and Toddler Meal Planner, Fruity chicken with Apricots. There are loads of simple and nutritious recipes in the book and the photos are gorgeous too. I love recipe books with gorgeously taken photos cos even if I don't try the recipes, simply looking at the photos will make me happy! Anyway, here's my slightly modified recipe (if you want the original one with passata, you’ll have to buy the book!).


Chicken with Apricot Pasta Sauce Recipe
Ingredients
2 tsp olive oil
1/2 small onion (chopped)
1 small garlic clove (chopped)
75g chicken breast (cut into pieces)
4 dried apricots (chopped)
1/4 capsicum (chopped) (I used a mixture of green, orange and yellow capsicum)
5 cherry tomatoes (chopped)
150ml chicken stock or water


Preparation

  1. Heat oil in a pan and saute onion till soft. 
  2. Add garlic and cook for a minute.
  3. Add chicken and saute for 2-3 minutes.
  4. Add apricots and stock or water. Bring to boil, cover and simmer for about 5 minutes.
  5. Lightly blend the mixture in a blender. 
  6. Transfer the mixture back into the pan, add in capsicum and cherry tomatoes. Cook for another 2 minutes.  
If your baby is unable to chew, you can throw everything into the blender and blend the sauce into a smooth texture. This is good on it's own or you can mix it with pasta or rice. It is also suitable for freezing.

Love this spag. Easy to cook, no need to cut as they are already in short pieces. Easy for Junior to self feed and it tastes pretty good too.
