#72 Salmon Potato Patties


Ingredients

  • Fresh salmon, steamed and flaked
  • 2 eggs, beaten
  • 1 clove garlic, chopped 
  • 1 cup dry bread crumbs
  • 2 small potato, steamed and meshed
  • 1 medium onion, chopped
  • 1/4 teaspoon dried dill
  • salt and pepper to taste
  • 2 tablespoons olive oil


Method

  1. In a bowl, mix salmon, eggs, bread crumbs, potato, onion, garlic, dill, salt, and pepper. Form the mixture into 1.5 inch balls, and flatten into patties about 1/2 inch thick.
  2. Heat olive oil in a pan over medium heat. Cook patties about 5 minutes on each side, until lightly browned.


This is Jr's version of the patty, a pirate! Grrr! Cheese and roasted seaweed are used for the details. On the side are stir-fried mixed veg and a container of ketchup.
